Belgian endive is a classic leaf vegetable, Known in its native country as Witloof Chicory. The leaves offer a soft texture and delicate crunch with a pleasantly bitter flavor. Ours are grown locally and sustainably in Abbotsford. It’s grown from chicory roots in the dark.
HOW TO SELECT:
Look for pale golden firm heads.
HOW TO STORE:
Cover or wrap endive in a damp paper towel, and store in a cool dark place.
HOW TO PREPARE:
While Belgian endive is commonly used raw in recipes it is also versatile in cooked preparations. Why not try the classic dish “endive au gratin”.
