Garlic Scapes are the flower stalks of the garlic plant. While you harvest garlic late in the season, garlic scapes are harvested in June to let the plant focus its energy into growing big garlic bulbs for the fall.
Use them as you would garlic, as an aromatic in a wide variety of recipes.
With a milder taste than garlic, they make an excellent pickle, a delicious pesto or an exciting tempura dish. Diced and frozen they become a treat to cook with in the winter months.
