Local Spring Green Cabbage
Local Spring Green Cabbage are the tastiest type of cabbage. Similar to a cos lettuce in shape, but looser in form, and without much of a heart, they don’t have the fibrous crunch of round cabbages.
Great if you use steam, or blanch them in boiling water.
They have a silky-soft texture, and taste sweeter and fresher than the robust, hearted cabbages we associate with winter, so they fit well with lighter spring and summer cooking.
